Aloo Gobhi (Gobi)

Very popular across India and Pakistan with many different variations as additional vegetables are added to give it a different twist. The end product has a yellow tinge from the turmeric in the recipe.

This vegetarian shami kebab recipe is an adaptation of one from Meera Sodha’s excellent recipe book “Fresh India”. I have modified it to avoid the use of any oil and replaced the paneer with quark. This makes the recipe lighter and was a bit of an experiment but I was really pleased with the end results.

Bhuna Curry Recipe

Bhunna in Urdu means “to be fried” so the Bhuna curry is another cooking style rather than a specific set of ingredients. So although considered by many as a type of curry dish, bhuna is actually a cooking technique whereby a mix of spices are fried in very hot oil in order to make a paste.

The meat is then fried together with this paste mix giving a thick intense dish.
