Name: Paneer

Paneer is a fresh, mild cheese widely used in South Asian cooking. It is made by curdling milk, draining off the whey and pressing the curds into a firm block. It is sometimes compared with cottage cheese in the UK, although paneer is firmer, usually unsalted and does not melt when heated.

Paneer can be cubed and fried, grilled or added directly to curries. Popular dishes include palak paneer, made with spinach, and matar paneer, which combines paneer with peas in a spiced sauce. Paneer may also be coated in a spiced gram-flour batter and deep-fried to make paneer pakora.
