Main Dishes

Curries, biryanis and other substantial dishes for the centre of the table.

Channa Masala

Another great dish from guest chef Astrid Mitchison of Halo Eats. As with all the recipes on her website, this is suitable for vegans and is gluten free.

This chickpea based dish is ideal as a side dish or as part of a mezze style menu if you are serving lots of different dishes to your guests.

Lamb Rogan Josh for Slimmers

We are often asked “what’s a good curry for slimmers?” This for me is a slightly mis-leading question as many curries are not fattening, it is often all of the items you eat alongside them that can make the meal less healthy.

Anyway enough preaching, here’s a great Lamb Rogan Josh recipe from Debbie Robinson of Slimming World and this shows you how with a few tweaks to the ingredients and cooking method you can enjoy a curry and still stick to a healthy eating plan.

Chicken Curry

This classic chicken curry recipe comes to us courtesy of guest chef Anjula Devi and is taken from her recipe book Spice for Life.

Everyone loves chicken curry so this is a recipe we recommend you try and learn how to make. It’s a great one for every aspiring curry chef to have in their armoury and is bound to be popular with the whole family.

Tandoori Lamb Curry

This Tandoori Lamb Curry with scented rice & onion seed naan is brought to us courtesy of Steenbergs.

Although not seen as an “official” curry this dish is very popular and is full of flavour. You can adjust the heat level to your own liking by adding more or less chilli powder.

Peanut Butter Curry

Guest chef Astrid Mitchison brings us her Vegan Carrot & Sweet Potato Korma.

Ideal for those who are looking for both a healthy curry and one that is not too spicy, this twist on a classic Korma still has plenty of flavour for you to savour.

And even better, this recipe is not only suitable for vegans but is also dairy-free and refined sugar free.

Sea Bass Keralan Style

Our guest chef for this Indian fine dining recipe is Asian chef of the Year 2019, Chef Dev Biswal, The Ambrette Restaurants

This Sea bass, Herb marinade, Kerala style Moilee sauce highlights the brilliant dishes available for those of you lucky to live near to the Ambrette.

For the rest of us, we are just going to have to try it at home

Prawn and Coconut Laksa

A warming bowl of spicy laksa that is quick and easy to make.

This recipe is brought to you by Steenbergs, providers of organic spices and cooking ingredients.

Laksa is a popular spicy noodle soup from Southeast Asia and can be found in Singapore, Malaysia, parts of Thailand and Indonesia

Carrot and Sweet Potato Korma

Guest chef Astrid Mitchison brings us her Vegan Carrot & Sweet Potato Korma.

Ideal for those who are looking for both a healthy curry and one that is not too spicy, this twist on a classic Korma still has plenty of flavour for you to savour.

And even better, this recipe is not only suitable for vegans but is also dairy-free and refined sugar free.

Chicken Old Delhi Style

This delicious chicken recipe comes to us courtesy of Des Biswal and the Ambrette Restaurant.

Breast of British chicken char grilled then finished in an Old Delhi style sauce of tomatoes and dry spices.

Something for a special occasion and an alternative when you are looking for something to enjoy other than a traditional chicken curry recipe.
