A form of shish kebab, popular throughout Russia, Eastern Europe, Pakistan, Mongolia, Iran and Israel.

Shashlik means ‘skewered meat’. Unlike other types of shish kebab, the meat is marinated in a high-acidity marinade for 24 hours before being cooked.

Shashlik can be cooked in a tandoor but is also commonly cooked on a charcoal fire.
