Chicken madras

A medium to hot curry which is made with a heavy use of chilli powder. Madras originates from the south of India, however the name ‘madras’ is not used in India but was invented by British restaurants.

Traditionally, madras is a vegetarian curry due to its origins in Hindu culture, however it can be served with meat. There are many different ways to prepare a madras but each variation always uses chillies or chilli powder as a main ingredient, giving it its red colour.
