Lamb Rogan Josh

A medium dish made out of ginger, garlic, cumin, cinnamon and turmeric. Often made through slow cooking.

There are two interpretations of the meaning of rogan josh. One is rogan meaning ‘oil’ and ‘josh’ meaning hot or passionate. The other is rogan meaning ‘colour’ and josh again meaning ‘hot or passionate.’ The second of these meanings is attributed to the rogan josh’s deep red colour.

Most commonly served with lamb.
